Authentically Tasty Greek Steak and Orzo Lettuce Cups

RECIPE CONTEST ENTRY: Leah Lyon, Finalist in the Stella® "Taste of Authenticity" recipe contest


  • 1 tbsp. minced red onion
  • 1/4 c. extra virgin olive oil
  • 4 tablespoons white balsamic vinegar
  • 2 teaspoons greek seasoning
  • 2 cups small diced English cucumber
  • 4 ounces Stella® Feta cheese
  • 3 cups cooked orzo
  • 2 tablespoons butter
  • 1/2 c. Stella® Black Pepper Romano cheese
  • 8 ounces sirloin steak
  • 12 pieces large boston/bibb lettuce


  1. Mix onion, olive oil, vinegar, and seasoning. Pour over cucumber and add feta. Toss well. Mix the orzo, butter and cooking liquid, stirring until butter is melted. Add Romano cheese and mix gently. Divide orzo among the lettuce leaves and add a few strips of the steak. Top with the cucumber-feta mixture and garnish with tomato (optional). Serve immediately. Serves 4-6 (2 or 3 lettuce cups each)
