Blue Cheese Bacon Grilled Peppers

Ingredients

  • 4 slices bacon, cooked and crumbled
  • 2 tablespoons red wine vinegar
  • 1 garlic clove, minced
  • pinch crushed red pepper flakes
  • ¼ cup olive oil, plus more for brushing or spraying
  • 16 ounces mini sweet peppers
  • kosher salt and pepper
  • 5 ounces Stella Crumbled Blue Cheese
  • fresh chopped chives, for sprinkling

Directions

Cook the bacon and crumble it ahead of time so it’s ready to go. In a bowl, whisk together the vinegar, garlic, red pepper flakes and olive oil.

Preheat the grill to medium high heat. You want it to be about 450 degrees F.

Slice the peppers in half lengthwise, removing any seeds and ribs from the inside. Place the peppers on a grill pan as this is the easiest way to contain them! Brush or spray the peppers all over with olive oil and sprinkle all over with salt and pepper.

Fill the peppers with a spoonful of Stella Blue Cheese crumbles. 

Place the grill pan with the peppers on the grill. Grill for 5 to 6 minutes, until the blue cheese is melty and bubbly. Remove the grill pan from the grill.

Transfer the peppers to a plate and drizzle all over with the vinaigrette. Sprinkle on the crushed bacon. Sprinkle on the chives and serve immediately!
