Blue Cheese Brussels Crunch

RECIPE CONTEST ENTRY: Rebecca Williams, Finalist in the Stella® "Taste of Authenticity" recipe contest


  • 1/3 cup walnuts
  • chopped 1 lb Brussel sprouts, halved
  • 1/3 cup Stella® Blue cheese crumbled
  • 1/3 cup walnuts, chopped
  • 2 tbsp olive oil
  • 1/4 cup balsamic vinegar
  • 1 tbsp light brown sugar
  • 2 garlic cloves, minced
  • 1/2 tsp red pepper flakes
  • 1/2 tsp rosemary, finely chopped
  • 1/2 tsp cinnamon


Preheat oven to 400 degrees Spread walnuts on baking sheet and toast in oven for 7-10 minutes. Set aside. Combine olive oil, balsamic vinegar, brown sugar, garlic, red pepper, rosemary and cinnamon in a bowl. Stir well. Add Brussels sprouts and stir to coat. Spread Brussels sprouts in pan and roast for 25 minutes. Remove pan and add blue cheese and walnuts, stir well and return to oven for 6-10 minutes, (until cheese melts!)
