Instant Pot Parmesan and Herb Mashed Potatoes

Ingredients

  • 8 large peeled and roughly chopped russet potatoes
  • 1 stick of unsalted butter, cut up

  • ½ cup of sour cream

  • ½ cup of whole milk

  • ½ cup of Stella® Shredded Parmesan Cheese

  • 1 tablespoon of chopped chives

  • 1 tablespoon of chopped rosemary

  • salt and pepper to taste
 

Directions

  1. Add the potatoes to an instant pot and completely cover with water.
  2. Place the lid on set the valve to seal.

  3. Pressure cook on manual pressure for 6 minutes.

  4. Release the valve until the steam is gone.

  5. Drain the potatoes and return back to the instant pot.

  6. Add in the butter, sour cream, milk, cheese, chives, rosemary, salt, and pepper, and mash using an electric blender until smooth and creamy.  

  7. Add more milk if you would like it to be thinner.

  8. Serve.
